So tonight I tried something new... I took a pork loin, wrapped it in bacon and cooked it in the oven. I basted it with peach bourbon preserve/sauce I picked up at HEB. Served it with a side of brown rice and a spinach salad with fresh peaches, avocado, green onion, and pine nuts. It turned out pretty well. The bacon did not get as crisp as I would like. Next time someone suggested I put it under the broiler for a few minutes at the end to crisp it up.
