I like watermelon cut in chunks with basil and feta cheese, dressed with pepper, salt, olive oil and a bit of balsamic. Seriously good stuff.

@Cabin_Mama might do it differently, but I just slice a watermelon (seedless) into big slices, then slice into bite-sized squares. Then slice whole Feta cheese into the same size squares and put on top of the watermelon square...then add a whole fresh basil leaf on top, sprinkle sea salt (I use the salt grinder thing so it's coarse), then cracked black pepper, then skewer each one with a wooden pick, then drizzle extra virgin olive oil over the top and sprinkle with a good balsamic vinegar. I usually serve them on a big platter lined with red leaf lettuce. Beautiful!
 
Alternately, you can use a fresh mint leaf in place of the basil. A lot of people do that, but I don't dig mint. Emoticon

how big are your melons? they look pretty juicy, so I'm guessing these are small, but firm.

@MooMaw of course! I like large catalope size melons. A little firm but plenty ripe. As a matter of fact, I don't think I have ever had a melon I didn't like. Big or small.

They're a good size, but it's not like you need both hands to carry one.
