This weather got me in the mood for a nice pot roast with vegetables. What did you have?

@Weathergirl5 : Yum! When I was a kid and we had roast, the next morning, my dad would chop up all the leftovers (beef, veggies, gravy and all...esp those taters!), then smash it all on a cast iron skillet and cook until the bottom was crunchy (those potatoes!). Then he'd make little wells with the back of a huge spoon, and crack eggs into them for breakfast the next morning. Best hash ever! Kind of looks like this (from Google images):

@brightlights : That sounds and looks so good! I might have to do that next time I have leftover roast. We hardly ever have leftovers no matter how much I make.Emoticon But that is a great idea to re-purpose them.

My husband got out of the hospital for stomach issues yesterday so where do the kiddos take us for dinner? Chuy's, husband had cheese quesadilla's, probably only thing that he would be able to hold down. Not a great idea, but it worked.

We made loaded potato soup on Saturday and chili yesterday, I think we were trying to squeeze in some winter dishes while we had some cold weather but we already ran out of it Emoticon

@lynnsgirl : I cook everything in a big Le Creuset Dutch oven pot in the oven for about 3 1/2 to 4 hours on 350. I add a package of Lipton onion soup and enough water to cover everything. Once it's done I take out the meat and the vegetables, and make a real with flour and butter. I put the Dutch oven on top of the stove and turn it on high. Add the butter and flour mixture and stir with a whisk until it reduces down and thickens. Then I serve it all together.
