The problem with putting it up seems to be the number of containers for prep and having a huge pot to cook it in

The color will mellow to more of a green as the ingredients merge with each others flavors in the jar

My Grandfather and Father made Chow Chow every year Their recipe used green tomatoes instead of cabbage. Great on sandwiches...
