Guess it's enchilada night up in here! Cheese (sharp cheddar) enchiladas baked in chili sauce, spicy charro beans, and homemade roasted Mexican street corn (roasted corn, diced jalapenos, red onion, cilantro, fresh lime, cumin, smoked paprika, chili powder, cotija cheese, mayo... literally just mix it all up). Nom!

@brightlights : Oh my gosh!! Those look so good. I top my cheese enchiladas with raw onions too.

@brightlights : Here's mine. Not as pretty as yours though. The tops got too crispy and broke but still tasted good.

Zammitti's pizza and pasta your way (Angel hair, meat sauce & shrimp). YUMMY !

@Weathergirl5 : Yum! Some crunch on there! I usually use corn tortillas for cheese enchiladas, but this time, I tried those 1/2 corn-1/2 flour blend tortillas from HEB. Way easier to work with and delish!

Brooklyn Pizza - white Onion only so freaking good.

We were lazy **** last night. Don't judge. You can't really mess up cooking them after a few beers on a Friday.

@Cbear : Well this was Thursday. Baked cod, white corn meal dusted, topped with Walkerswood Jamaican Jerk and lemon juice, Basmati brown rice cooked with Saffron and herbs, sautéed spinach and garlic in Avocado oil and 2 petite rolls.
I'm not just a pretty face...I have mad savant culinary skills every so often.

@brightlights : I have wanted to try the half corn half flour fresh tortillas that they make in store at H-E-B. So you would recommend them? That is good to know. I did like the fact that the corn tortillas had some crunch on them. Especially when the cheese gets kind of browned and crispy. Someone call it burned, but I think it's perfect.

@Cbear : Awe thank you. This one is pretty quick and easy. It's a great way to use up leftover chicken or even Thanksgiving turkey.
