I think it turned out really well. I made a basic risotto recipe from scratch. I then roasted some fresh pumpkin and folded it into the risotto once the risotto was cooked. Toasted up some prosciutto in the oven to make it crispy. Then fried some fresh sage leaves in butter to a crisp them up. Topped the risotto with the fried sage leaves and cooked prosciutto. Yum!

hang on , what's the difference between risotto and orzo ? I got orzo, i think i thought it was risotto. i made it with redfish,trout, shrimp mushrooms, bell pepper and onion with alfredo . i dont think i got a pic but i will check around . but this is the consistency i was looking for, isnt it like a pasta rice ?

@ginx : Orzo is pasta. I use Arborio rice for my risotto. I don't know the technical difference between Arborio rice and regular white rice but there is a difference. All of the risotto recipes I have seen call for Arborio rice.

@Weathergirl5 : Looks awesome, I am going to have to try this soon. I've never made risotto personally but have had an itch for it lately and have been looking at recipes. I have everything but the fresh sage already, although I may have to fold in pureed pumpkin rather than roasted... thanks for sharing!

@Floyd : I am sure it would be good with pureed pumpkin as well. Let me know how it turns out. Since I can only get fresh pumpkins this time of year a good alternative for making it other times might be canned or pureed pumpkin!

DW used to use canned pumpkin all the time but hasn't for a few years now, since we found out that many of them aren't even pumpkin at all but other squash or a mixture. Not that I could tell... but now she buys fresh through October, purees and freezes it, and jams it into every dish she can until Christmas Emoticon
