@Astrokatz : My fav is for fajitas, too (or beef raman). Sometimes, I just season and sear one on a screaming hot grill for about 6 minutes/side (rare, nice crust), take it off, rest, slice it thin and just have it as sliced steak with a baked potato and a veggie.
I say weird, because most people I know don't even know about flat iron...most prefer filet, ribeyes, t-bone, etc. Flat irons are getting harder to find lately.
