What's Cookin' This Week?
 
Anyone making some fall-weather dishes this week in honor of the cool weather? Soups, stews, chili, gumbo?
 
I might actually make gumbo this week. Unheard of around here before Halloween! 😀

I think I’m free from doing any actual cooking (other than my brain with margarita ‘s) as my oldest is busy with homecoming beginning on Thursday’s AHS tailgate party and my youngest is tied up with the upcoming theatre performance all weekend. Yay!!!!!!

Nothing! I have the stomach bug from hell right now. The family must scrounge for meals on their own. There's the pantry. There's the fridge, There's the microwave. Mom's taking a sick day. Figure it out. I'm calling it "Self-Sufficiency 101".

Chicken noodle soup tonight, chili, kimchi stew, beef stew. I've got a new recipe for Jambalaya I wanna try sometime this week

I made some hot Italian sausage and tortellini soup...soooo good (and pretty...had to take a pic!)!

I'm definitely down for some chili. Cooking during cool weather is way more fun than summer. 😐

Really easy...
 
Just brown some ground Italian sausage in a big pot (I used hot), then remove to a paper towel lined plate (blot as much grease off as you can, but don't rinse), then in the same pot, saute a bunch of diced carrots, celery, shallots (or onion), crushed garlic and Italian seasoning (basil, thyme, parsley, etc) for about 10 minutes (may have to add a little olive oil) until tender.
 
Then add a bunch of chicken (or vegetable) stock (I added 2 cartons of chicken stock), partially cover and let simmer for about 15-20 minutes. Add sausage back in and bring to a low boil. Make a little slurry with flour and water (about 3 T of flour...stir with water until lump free) and pour in while stirring until thickened slightly. Add fresh tortellini (any kind...I used 3-cheese) and about a cup of half n half, and a couple big handsful of fresh baby spinach (it wilts immediately), simmer until the tortellini puffs up (about 2 minutes) and serve!
 
You can make your own tortellini, but store bought is fine (the fresh stuff in the refrigerator section, not dried or frozen). There's never a drop left!

Well we cook traditional gumbo all year round. But tonight will be the first chili of the season. Turkey and wild hog chili. Then duck gumbo after we get some birds down.

We need to have a soup-exchange coodied people support group.......On second thought....we'd probably just end up exchanging coodies. Lol
 
We love our kiddos, but they are pretty much little petri dishes with feet during cold and flu season.

Had homemade chicken noodle soup for dinner last night (our boy is under the weather), homemade deer chili for lunch today, and grilling some NY strips for dinner tonight with roasted potatoes and chopped salad.

@brightlights Monday: chicken salad and French bread w black olive & feta pesto
Last night: fried backstrap, fresh mashed potatoes, scratch milk gravy w, the crumbling from the meat, chopped jalapeño and garlic, and corn. A bunch of guys were over visiting us so it seemed appropriate!! 😂😂😂
