Cookie Recipes

It's the season for baking for our loved ones. Let's share our favorites.

I made these last weekend. Easy and so good. Also long lasting - I made them Sunday and they are still fudgy and soft this morning!

I made that kind of cookies with red velvet cake mix. They looked Christmasy and they weren't too sweet (to my liking).

Made some white chocolate Christmas Bark...the same way you'd make any other kind of bark (melt the chocolate, add whatever, spread on a cookie sheet, let harden and break into pieces), but add dried cranberries and pistachios. So good...and pretty!

@brightlights - I love peppermint bark - how does one make it? The stuff at Williams Sonoma is ridiculously expensive.

@Cabin_Mama

All you do is melt a bunch of good quality white chocolate over low heat in a double boiler (if you don't have one, set a big metal bowl over a pot of simmering water and melt that way...using a microwave ruins the chocolate, imo), the when melted, add crushed peppermint candy, stir, quickly pour onto a big cookie sheet lined with parchment or foil, let it harden, then break into pieces. I like to add a few drops of peppermint extract to the melted chocolate. That's it! You can also use white almond candy coating bricks if you don't want to spend a lot on the chocolate.

Or you can get fancy and do 2 layers...first, melt milk chocolate, then spread by itself on the cookie sheet and let set...then follow with the above steps and pour that over the set milk chocolate and let set. So it looks like this:

That is really all there is to it. My kids make it all the time all by themselves.

I do venison backstrap with tender chunks of venison are marinated twice, and wrapped in thick bacon before being grilled until crispy on the outside. A venison version of Filet Mignon. This is a heavenly use of the best part of a deer. For the BBQ sauce, I prefer hickory flavored. First I have to get my deer.

@brightlights can you use the candy melts that you can buy at Michaels? Keep the easy recipes coming people. So far, I can make all of these. I am tired of my same old cookies.

Thanks for thinking of this @Cabin_Mama !

@TexanFan1 :

I never have, but I don't see why not. Just melt them really slowly so they don't gum up on you.

Also, the Christmas bark can also be made with dried Goji berries (super healthy...HEB carries them) or dried cherries for those who don't like cranberries. Emoticon

@brightlights :

THANK YOU. It's the two layer part that I couldn't figure out. I'm going to make this today I think.

This sounds weird, but it's oddly delicious! Follow the butter/brown sugar instructions exactly and it's fail-proof! People go insane over these. Emoticon
