What's on the menu? Definitely Mexican something tonight...just haven't decided what yet. I might splurge for a Thursday night and whip up a couple of watermelon jalapeño 'Rita's! Emoticon

Cinco de Mayo is our anniversary. We are celebrating by my husband taking our son to his end of the season soccer party, while I stay home with our younger daughter. How romantic.

We smoked some chicken breasts the other night...I'm going to take the leftover breasts, chop them up and make smoked chicken and hatch chili enchiladas with sour cream sauce. Add some rice, black beans and Pico and !!Arriba!!
 
I need to run by the store and get some cilantro and some of that white crumbly Mexican cheese (cotija?)...
