We would never buy our meats anywhere else. This is down home cajun. Everything there is fresh cut. This is a great family owned business. I agree the boudin is the best we have ever had. The meat selction is awsome and this is a small family owned business that takes tremendous pride in what they do. You can Not find this kind of meat in a grocery store.

I support them as a small family business, but I cannot afford them at all times .....
Some of his prices are high..... But quality is great

We've lived here for a year and FINALLY tried their stuffed pork chops.
Not sure what took us so long, we'll be back for more soon!

Hubby and I went in yesterday and they are super nice! We bought sausage but saw so much more we wanted. Once I am gainfully employed we will stop in and stock up!

The reason lamb is hard to find is that there is not a high demand for it. Come see me at the market and lets see if I can get the cut you are looking for.

You want lamb a place called Cabrito Garza near IAH as plenty of lamb as well as goat and other meats.

I've seen grass-fed lamb chops ("lollipop" style...at least that's what I've seen them called at a few restaurants) at HEB in the meat market (they're pricey!). I've never had lamb...would have no idea what to do with it!

All I really need at the moment is ground lamb since there are a lot of things I use it for. Moussaka is one of my favourite comfort foods, but lamb burgers are also very good and there are a number of Indian recipes that call for lamb, plus Moroccan and other Mediterranean dishes.
 
I always find it amusing to see lamb and goat lumped in together though. Lamb is very popular where I'm from, perhaps more so than beef, yet goat meat is rare and would be too exotic for most people. Apparently it's a very healthy meat though.

That looks like a pretty good recipe. There is a lot of variation out there due to geography and families having their own recipes. Eggplant is integral though, and potatoes are usually present. I like to boil potato slices, then gently fry them in peanut oil until slightly crispy and use them as a base layer rather than a middle layer.
 
I feel that lamb is necessary to get the correct flavour profile. It works with the spices involved. Cinnamon, for example, complements lamb nicely, but it's hard to imagine it would enhance beef or turkey.
 
The bechamel sauce is what completes the dish. It should be thick, almost too thick to pour, and sprinkled with nutmeg.
